I'm trying to make screens for our pilothouse and aft doors (Kadey Krogen 42). I tried with the black mosquito netting (light/soft) fabric. It didn't take to me and vice versa. Made a mess trying to get it straight as the area isn't square - likely user error! Looking at the firmer/plastic mosquito mesh or Phifertex. (I figure I can spray it with Shoo Fly for no see ums). Any reasons for one over the other? And this round I'll make a pattern! Thanks.

I would use the Phifertex Plus or even the standard Phifertex (if you need more visibility). Either will have the stiffness you are looking for and they are dimensionally stable. Watch this video for more help on picking one:
