I've been noticing that owners of new sails, including myself, are having a difficult time stuffing their new, crisp sails under their original, tattered sail covers which seem rather small.  With your kits, is it possible to make the section towards the boom end a little fuller to accommodate the heavier cloth, like 7.4 oz?  In other words, not such an extreme taper to the clew of the sail? 

I have a 10 foot boom (Watkins 27).

I wouldn't mind altering the dimensions on the kit if there was enough Sunbrella included to make a little fuller section all the way down the boom to the end.  Is this possible?  Thanks.

You have nothing to worry about. We designed our standard kits with new sails in mind. They will be more of a loose fit which is our preference for sailcovers to allow the sail to breathe and dry out quickly. But for the Watkins 27 I would recommend the 13' sailcover kit instead of the 10' anyway. So you are in really good shape following the standard pattern given that your boat will be at the smaller end of the range for this sailcover pattern as well.
