I am making 2 new 10' offset umbrella covers using Top Notch 9 fabric & Profilen thread from Sailrite.  In the video for making an umbrella when sewing gores together only one line of stitches is put in at each side of a gore panel, no seamstick, with no top stitch.  I guess this is to make it nicer looking from the outside?  Any reason not to top stitch?
If I don't top stitch then I am thinking of sewing binding to the seams on the underside of the umbrella to give it a nicer look from underneath.  Anyone see a potential problem with this.  Thanks,

All the techniques you described are acceptable and will not cause any issues with your umbrella project. If you would like to add a top stitch you may do so, it will add strength to the seam. Or if you like you can add a binding to the underside of the seam. Please let us know if you have any more questions and good luck with the umbrella project.
