I am repairing a jib and need to re-attach some lash-on jib snaps. What knot do I use to finish off the twine?

Knots typically wear off quickly. The proper appoach is to pass the needle through muliple layers of previous thread several times to lock the stitching. Then cut the thread and use a hot knife to melt then end down to a "button" and press it flat. This has always worked very well for me when using waxed twine.
