Tempered Glass is best, but a sacrificial varnished plywood surface works too. Formica will work also but the surface gets marred quickly.

Tempered glass is a great choice.

When I did some remodelling at my home I retired a hollow-code door w/ a mirror glued onto the surface. That regular glass is my hot knife cutting surface.

It has held up fine for years of usage w/o any degradation.

I use my T-Square that it is sitting nearby that I've just used to mark the seams with.
